Our authentic Vietnamese white peppercorns are very similar to black peppercorns, though they mainly differ in how they’re prepared. White peppercorns are harvested from the plant earlier than black peppercorns are, before being soaked for a few days in water, and removed from their outer husk. This ripening process is longer than a similar process that occurs in other peppercorns, so they offer a slightly hotter and more pungent flavor.
Typically, white peppercorns have a stronger aroma than other peppercorns and are used in white sauces or light-colored dishes. As with other peppercorns, they’re best ground directly onto food.
A classic use of any pepper is in sauces or condiments, and white pepper is no different. White peppercorn gravy is a twist on the traditional American gravy that’s typically served alongside chicken fried steaks or biscuits.
