Bay leaves are one of the most famous and widely-used spices the world over. They are, of course, leaves from the bay tree, and can be used either fresh or dried. Our bay leaves are dried, as using them in that way can help you to achieve a deliciously potent and strong flavor with little effort at all.
Bay leaves are most well known for the depth of flavor that they bring to savory dishes, as well as the context they can give to very salty meals. It’s common to see a bay leaf or two floating in a stew, though you might not know why it’s there. Typically, bay leaves are added to stews, broths, curries, or soups that contain meat, as the meat used is often quite salty. This saltiness can be overpowering compared to other ingredients in the dish, so a bay leaf is often bought in to help detract from that overpowering flavor, and give a unique, almost floral aroma to the food overall.
That piece of food theory can be applied to any dish that might be a bit too salty - adding a few bay leaves and allowing the food to simmer for fifteen to twenty minutes can bring a whole new palate to the dish, allowing for a new dimension of flavor to come forward.
