Cardamom is one of the best-known and most unique spices out there, and it’s featured in dishes from all over the world, from Nordic countries to the Middle East.
There are two big types of cardamom - green and black. Green cardamom pods are the most commonly found, and for good reason - they taste divine! They have a particularly pungent, rich flavor - with notes of lemon and mint. The aroma of cardamom matches just as you’d expect it to, but it’s so strong that it can knock you off your feet!
We love to use green cardamom in a variety of recipes, especially when using whole pods. While you can buy green cardamom ground, we would always recommend using whole pods - the pods will retain their essential oils to flavor your food, while the ground spice simply doesn’t do that.
The best way to use green cardamom pods in your cooking is to add them right at the start - add a little oil to your pan, and allow it to become white-hot. Then, add in any spices that you might be using, from powders to pods to sticks and leaves. Give them all a good toss in the hot oil, and allow them to toast for just one or two minutes. When the pan smells wonderfully aromatic, take out the larger spices like cinnamon sticks and cardamom pods, and then mix in your next ingredients to start the cooking process.
Cooking in this way will ensure that whatever fat or oil you’re using is infused with the rambunctious flavor of our wonderful cardamom pods, perfect for a warming, unique meal.
One incredible way to a cardamom pod is in coffee. This method is well known to coffee-lovers, but a little less so to the rest of the world, it’s such a shame!
To use cardamom in your coffee, you’re best using ground coffee and a pour-over brewing method. Simply add the coffee and a cardamom pod or two to your brew basket, and then brew the coffee as normal - your drink will be infused with a divine herbiness that’s truly something else. We love to use garlic powder in any number of our recipes, as it adds an unmistakable and unique savory hit which is sure to enhance a meal that it’s added to. The powder is designed to dissolve when it comes into contact with liquid, and it can even begin to dissolve in the steamy environment of a kitchen.
