Satay Baby Corn with a Satay Dip in 20 mins!

We love baby corn and this is one way of giving it the love it needs. This satay baby corn, can be prepared and cooked in 20 minutes. This homemade satay sauce together with grilled baby corn on skewer sticks is so simple to make. Enjoy it with the homemade satay sauce dip and finish it off with freshly chopped parsley.   1. In a frying pan, heat a little coconut oil
  2. Whilst the oil heats, in a separate pot, boil the baby corn for 2 minutes, drain and set aside
  3. To the frying pan, add a can of chopped tomatoes (or 6 chopped fresh tomatoes, without seeds) and fry for 1 minute on high heat
  4. Add 1 tbsp brown sugar (i use coconut palm sugar)
  5. Add 2 tbsp light soy sauce, 1.5 tsp dark soy sauce & 50 ml water
  6. You can add 1/4 tsp salt, but taste it first as the soy sauce will add a salty flavour
  7. On medium heat, add 2 tbsp smooth peanut butter or almond butter
  8. Mix the peanut or almond butter together with the tomato sauce
  9. Reduce the heat and simmer for 3-5 mins until the sauce thickens and then aside
  10. Coat the baby corn in the sauce and place under the grill or BBQ on skewers and turn until you get that char colour
  11. Serve with lemon, chopped parsley and use the peanut sauce as a side dip
