My 10-minute quinoa, chickpea and cherry tomato salad. We were travelling in Morocco and attended the Lotus Chef cooking class. Here, We learned how to use their favourite spices and incorporate it within healthy salads. We brought this technique back to the UK and added our twist of spices to the regular salad, resulting in this colourful dish, perfect for those hot summer months or those days where you are rushed for time. This would be a fresh and healthy recipe to start with!
Cook & prep time: 10 mins
- Mix a tin of chickpeas with Bulgar wheat (pre-cooked optional) and quinoa in a bowl (We used pre-cooked red & white quinoa)
- Add diced onions, cucumber, tomatoes, red peppers, finely chopped chives and mint. Careful not to go over the top with mint.
- Add 1 tsp of cumin, 3 tbsp olive oil, pink Himalayan salt, pepper and 1 tbsp lemon juice
- Garnish with cherry tomatoes, mint leaves and chives
